Easy Chicken Enchilada Casserole

Image
Easy Chicken Enchilada Casserole Easy Chicken Enchilada Casserole – 4 ingredients is all it takes to make this popular Mexican dish. It’s cheesy, it’s spicy, it’s sinfully delicious. Mexican food is my weakness. Totally! I love all Mexican food. I love going to Mexican restaurants and trying everything on the menu. But I also love to make Mexican food. This chicken enchilada casserole only requires 4 ingredients, so it doesn’t get any easier than this. I love chicken enchiladas and this casserole is even easier to make than making regular chicken enchiladas because you just layer your ingredients. Even a kid could make this. And if you want to have some fun, have a mojito while you make this, or with it, before or after or during, doesn’t really matter. If you have a sombrero you might even want to wear that and make this chicken enchilada while dancing to the Mexican hat dance song. Ok, now I have that song stuck in my head. Anywho here’s how you make this awesome dish. Pretty simple,...

SPICY ETHIOPIAN LENTIL STEW

Image
SPICY ETHIOPIAN LENTIL STEW This Ethiopian lentil stew is made with veggies and hearty potatoes simmered in berbere-spiced red lentils, for a healthy and flavor-packed dish that’s totally doable on a busy weeknight. If you go to an Ethiopian restaurant you should find something on the menu that looks something like this dish, but it would be called misir wat, and it would be incredibly delicious. I had no idea when I first tried that dish how easy it was to make at home, but here it is, something very no-fuss that you can easily cook up on a weeknight in one pot. I threw some extras into my stew, just because I like extras. The potatoes, tomatoes and spinach wouldn’t be found in traditional versions of the dish, at least as far as I’m aware, but who doesn’t love potatoes, tomatoes and spinach? This Ethiopian lentil stew is made with veggies and hearty potatoes simmered in berbere-spiced red lentils, for a healthy and flavor-packed dish that's totally doable on a busy weeknight. Ing...

HONEY GARLIC SHRIMP SKILLET

Image
HONEY GARLIC SHRIMP SKILLET It’s been awhile since I’ve done a shrimp recipe. The last one I think was coconut shrimp which turned out amazingly good. Especially with that chilled pineapple sauce. So here we have a super simple honey garlic shrimp recipe, all done in the comfort of your skillet. It’s yummy, it’s healthy and oh so easy to make. I used jumbo peeled shrimp with tail on for these. They just tend to look better in pics. But you can use whatever kind of shrimp you like or can easily get your hands on. We begin by making your honey garlic sauce which is basically just some honey, soy sauce, ginger and garlic. Tada! I wasn’t lying when I said simple. INGREDIENTS 1 lb. shrimp, peeled and deveined with tail on Sauce: 1 teaspoon garlic, minced ½ teaspoon ginger, minced 4 tablespoons honey 2 tablespoons soy sauce INSTRUCTIONS Combine the sauce ingredients and divide it into half Marinate the shrimp with one half of the sauce for 15-30 minutes. Discard marinade Over medium high hea...

THE EASIEST CREAM CHEESE SWIRL BROWNIES

Image
THE EASIEST CREAM CHEESE SWIRL BROWNIES Boxed brownie mix + a 3 ingredient cream cheese topping. It doesn't get any easier than this! INGREDIENTS 1 box brownie mix 8 oz cream cheese softened 1 egg 1/4 cup sugar INSTRUCTIONS Prepare the brownies as directed by the box. Reserve about a cup of the brownie mix before pouring the rest into a greased 9×9 dish. In a separate bowl, blend together the cream cheese, egg and sugar mixture. Pour the cream cheese mixture across the surface of the brownie mix. Pour the reserved brownie mix over the cream cheese. It doesn’t have to be neat- you’re going to do the swirls after this. Using a toothpick or knife, gently swirl the cream cheese mix around into the mix. Bake for the amount of time directed on the box + 25 minutes* RECIPE NOTES I don’t like the cream cheese topping to be TOO sweet, so I used 1/4 cup of sugar. If you’re unsure, mix together the cream cheese and sugar FIRST, then taste it. Add more sugar if you’d like. Then mix in the e...

JAPANESE COTTON CHEESECAKE

JAPANESE COTTON CHEESECAKE This post may contain affiliate links where I may earn a small amount of money if purchases are made through links which helps support this site and keep its content free. These cotton cheesecakes usually need to be baked in a water bath in order to prevent cracks as they do rise considerably high in the oven. When baking a cake in a water bath, remember to add aluminum foil around your cake pan as the water can go in! I didn’t do it the first time I made cheesecake years ago and the bottom got all soggy! Oops. I learned my lesson! A yummy fluffy and spongy gluten free and sugar free cheesecake Ingredients 3 eggs 200 g cream cheese 7oz** 1/2 cup blanched almond flour 60g 1/2 tsp baking powder 1/2 tsp stevia powder 1 cup blackberries optional, I used frozen berries that I microwaved for a minute Instructions Preheat the oven to 160C/320F. Add some water, about 2cm, to a baking tray and put it in the oven on the bottom rack. Line the sides of an 18cm/7” spring ...

SAUSAGE, EGG, AND CHEESE BREAKFAST TOTS

Image
SAUSAGE, EGG, AND CHEESE BREAKFAST TOTS These Sausage Egg and Cheese Breakfast Tots are an amazing brunch recipe that fills tater tots with sausage, cream cheese, and scrambled eggs! I think the sausage is what makes these little bites so awesome. You cook the sausage, drain the grease, and then add some cream cheese and continue to cook until it is all melted together with the sausage. That makes the sausage extra creamy and delicious. When it comes time to stuff the tater tot cups you add a little bit of egg and then a little sausage cream cheese mixture on top and put them back in the over to bake until the tater tots get crispy. Just a couple of minutes before you take them out of the oven add a sprinkle of cheddar cheese over the top, because really, you can never have too much cheese. When they come out of the oven give them a minute or two to cool down and then pull them out and pop one in your mouth. It’s everything you love about breakfast, hash browns, sausage, egg, and chees...

20 Minute Potato Wedges

Image
20 Minute Potato Wedges This post contains some affiliate links. Click here to read my full disclosure policy. The thing that always kept me from making potato wedges in the past is how long they took to make & how labor intensive they usually are. So since I like to really break things down & simplify things, I had to do that with these wedges. If I can find a way to make anything easier then I’m all for it. Holy cow- these are AMAZING!!!!!!!!!! Be sure to grab my ranch dressing recipe for dipping too! 20 Minute Potato Wedges are loaded with cheese, bacon & chives. RED VELVET CUPCAKES WITH CHOCOLATE CREAM CHEESE FROSTING

Image
RED VELVET CUPCAKES WITH CHOCOLATE CREAM CHEESE FROSTING These Red Velvet Cupcakes are super moist and topped with a delicious chocolate cream cheese frosting! They’d be great for any time, but with some super cute heart decorations, these babies are all decked out for Valentine’s Day! The frosting is a chocolate cream cheese. You could totally leave out the cocoa and add in a bit more powdered sugar for a regular cream cheese frosting if you like. I just decided to change things up and add some chocolate. It pairs well with the red velvet and chocolate is yummy, so I went for it. But either would be delicious. Once the frosting is added, the sides of the frosting are dipped into sprinkles and the cupcakes are topped with cute little hearts. I made the hearts with red candy melts, which are super easy to work with and dry nice and firm. You could even make other shapes, or little words like I did with the “love” on these strawberry cupcakes. So many options! No matter what though, thes...

Bacon-Wrapped Pineapple Burger

Image
Bacon-Wrapped Pineapple Burger Don’t you hate when you’re eating a burger and the toppings go sliding off onto your lap? We solved that problem by wrapping everything up together, which also really allows the sweet and smoky flavors to permeate the meat. Once you taste how much island flair our Hawaiian-inspired burger has, you’ll never eat a plain hamburger again. Make this burger even more over-the-top with a slice of cheese— ’cause you know that if bacon, pineapple, and cheese make such a good team on pizza, they’ll be amazing on a burger. Or you could also use this bacon-wrapping technique to dress up chicken breasts, or go really exotic and sub teriyaki for the BBQ sauce. Ingredients 2 pounds lean ground beef ½ cup prepared barbecue sauce Kosher salt, to taste Ground black pepper, to taste 4 canned sliced pineapple rings 8 slices bacon Hamburger buns (optional) Hamburger toppings (optional) Directions Preheat the oven to 400°F/200°C.
